1 cup cashews
1/2 cup raisins
zest from 1/2 lime
2 tbsp lemon juice
shredded coconut (for rolling)
Put all ingredients (except coconut) into the blender and process until ingredients start to bind. Form into balls and roll in coconut.
Please note, I highly recommend making a double batch because you will eat them so quickly!
