kefir-cake

Ingredients:
75 grams organic butter
1.5 cups organic self raising flour
2 free range or organic eggs
*1 cup caster sugar
1 tablespoon vanilla essence
1.25 cups of kefir

Method:
1. Melt butter, add eggs, vanilla essence and kefir.
2. Stir in dry ingredients (don’t over mix)
3. Cook at 180 degrees for 40-50 minutes. Either line tin with baking paper or spray baking tin with coconut oil.
* Please note – if you have a thermomix, make your caster sugar from organic raw sugar.

To serve – sprinkle with icing sugar, or for a healthier alternative sprinkle ground coconut on top.
